Us at Great Cuisine Caterers aim to provide our customers with the most amazing fusion food experiences that will be the talk of the town.  We believe in the feelings of harmony and togetherness and strive to create this by blending our passion for delicious grub/food with our countless years of experience in the catering industry to serve you, the customer, with an unforgettable taste experience.  No matter what the occasion, special, casual or business, we will leave your taste buds screaming for more.

Our Cuisine

We integrate some of the flavor profiles across the continent to bring to you the essence of these culinary delights with our spin on these classics.  We hope to enrich the flavors which you may already know and (re)introduce them to you in a new way.  In our cooking, we select local and seasonal ingredients along with some of the more traditional grains and proteins to translate Africa’s bounty to the table.  You will also notice offal, slow cooking and bold flavors. We hope to bring new value in some of the often overlooked ingredients from the region.  For us, eating is a celebration of food’s origins, the paths it travels on the way to our tables, and the people whom it brings together through the journey.  Our meals tell the story of the places we have been, the cultures which we have interacted with and the people whom we have had the pleasure to meet.  We hope you enjoy our interpretation.

Meet The Chef

Head chef Johann Roos

Part of the team to set up the canteen and coffee shops at the ABSA Bank in Waltloo,  Petroleum Street, Pretoria . I was in charge of managing the entire canteen which included setting up menus, ordering stock and the running of the canteen on a daily basis.  The canteen started off with 300 employees a day which increased to 1,000 employees a day as more staff relocated to the building. 

I was a Senior Chef catering for the State Funeral in Qunu, Eastern Cape in 2013 for the late Nelson Rolihlahla Mandela . My focus was on the 500 attendees at the Icons House which included kings, queens, many celebrities and senior statesmen from all over the world and South Africa.

I was Executive Chef at the Sheraton Hotel who hosted the German Football Club for the 2010 World Cup Soccer.  The function hall in the Sheraton Hotel replicated the club in Germany. The wives of the German football team also stayed at the hotel.

I gained an enormous amount of experience and expertise from working at superb and well-known hotels such as the Balalaika Hotel, the Carlton Hotel in Johannesburg, Gold Reef City Hotel & Casino, Southern Sun Holiday Inn Plaza and several more. 

Furthermore, I was a licensed National Qualifications Assessor for the Hospitality Industries Training Board and spent all my years as Executive Chef training young and upcoming chefs.  Many of these chefs have become Senior Chefs in hotels and catering companies. 

Merits:

Johann’s excellent show and professionalism reflected in his outstanding performance during the South African Food Festival presented at the Sheraton Hotel and Towers in Santiago, Chile. 

Furthermore, in addition to this brilliant chef’s achievements at various prominent hotels he also managed to make a name for himself preparing exquisite dishes for the crème de la crème from all over the world. In 1990, after the release of the former president of South Africa, Johann Roos prepared Nelson Mandela’s meals, being one of the first chefs in charge of the food preparations for this South African icon. Various other well-known people that the chef prepared delectable delights for included Mangosuthu Buthelezi, Dr. Madeleine Albright (the first woman to become a United States Secretary of State), King Goodwill Zwelentini and Bishop Desmond Tutu. One of the residents at Elangeni Hotel was Bantu Holomisa who then became a resident at the Carlton Hotel which was so strange as I had moved up at the same time. 

Moreover, Johann boasts about cooking for Tina Turner, “The Queen of Rock ‘n Roll” and even for the American blues rock trio, ZZ Top.
